We had her select a recipe to share. The great thing is this wheat- and grain-free recipe is not only delicious, but super-easy to make at home!
Sage Chicken with Portobello Mushrooms
Deemed the "humungous fungus" by some, the portobello mushroom has been used in many cultures for centuries; this delicious recipe, however, was invented fairly recently in our kitchen.
1 tablespoon olive oil
5 to 6 fresh sage leaves
1 teaspoon salt
1 pound boneless and skinless chicken breasts, diced
2 portobellow mushroom caps, diced
Heat the olive oil in a stovetop skillet, add the sage leaves, salt, and chicken.
Once the chicken has browned, about 5 to 7 minutes, add in the mushrooms, and cover the pan with a lid.
Allow the dish to cook until the chicken is done, approximately 10 to 15 minutes.
If there is too much water created by the mushrooms, do not cover the pan completely and allow some of the water to evaporate.
